In a recent post by Miso, she mentions that she eats red peppers, but that green are particularly hard to digest.
Is it the case that red peppers are easier to digest than green? Anyone have any experience? I haven't really eaten much peppers since stable, and used to love them before I got IBS...

I find that I can tolerate a small amount of green pepper if I sauté them and add them to a good SF base. I'm not really a fan of red peppers and I don't know if one is typically easier to digest than the other. Just make sure you don't eat them w/o a SF base. And I strongly urge you to NOT eat them raw.

Thanks
I didn't even imagine raw peppers, what I meant is baked. Mmm, I used to love baked peppers and miss them. I don't know how I will bake them without the specific "pepper baker" we used back home (and without ruining a pan) but anyway...
Did anyone know of a difference specifically between green and red peppers? Aren't they both essentially IF and water?
Thanks! --J

I don't know about green peppers. I have not eaten them in awhile. However, I have problems with sauteed or roasted peeled red peppers and relish made with red peppers.

greenn peppers are to my knowledge unripe red peppers, hence why they aren't sweet yet, i can eat green peppers cooked i think, but can eat red, yellow and orange peppers raw till the cows come home, which is good cuz they replace tomatoes for me.

Thank you so much for answering!
So, you can eat them raw? Wow... maybe I can try then... That's right that green ones are unripe red... but maybe with ripening something with the structure changes and makes them more tollerable...
I usually only eat cubanelle peppers (can't get used to the taste of bell peppers), but I will look for red ones, mmm
Thanks again

just wanted you to know i eat both peppers **occasionally** (on vegan pizzas) and dont find to have too many problems. sometimes i suffer a little gas/bloat the next day but organic peppers are soo expensive that i dont buy them very much. good to know though about green peppers causing some digest. problems. maybe red peppers are sweeter and dont have too much acid??

I don't like green peppers, but I use the roasted red peppers (from a jar, off the grocer's shelf) as a tomato substitute with no problems.

I have two co-workers who don't have IBS or any GI problems. They both say they can eat almost anything, but green peppers are off limits. They can both eat red peppers, though.
