I love red skinned potatoes. Do you think it is safe with skins left on??

I eat them all the time. Potato skins are insoluble fiber, so incorporate them into your diet like any other IF - try a few bites at first and see how you do.

I'm fine with red skin. If it's russet or something, I only take a bite or two. I love the taste of the skin, but the thicker it is, the harder it is to digest.
