Post infectious IBS (PI-IBS) can last a life time. Less than 50% of individuals PI-IBS recover normal bowel habits within 5 years . The severity of my IBS increased dramatically after an intestinal infection 25+ years ago.

Those are very good questions. I am not sure I have the answers but let me tell what I understand about PI-IBS.
Post-infectious simply means that the IBS began following an infection. For example IBS can begin after having bacterial gastroenteritis.
Some people with PI-IBS recover completely, some recover partially and some don't recover at all. So there is a chance you can recover completely.
From my experience when I had my GI infection and my IBS dramatically worsened I wish I would have known then what I know today. I could have used my diet to control the symptoms and encourage healing. Perhaps my IBS would not be as bad as it is now.
I think you are doing the right thing by getting control of your diet but be careful of fads. And use your common sense.
Good Luck!

Post infectious IBS is a diagnosis that your doctor would have given you. It is not something you determine for yourself.
