I can easily handle chicken fajitas at a restaurant. I also do okay with shredded chicken or ground turkey tacos. Just remember to leave off or use very little lettuce (if it is a trigger for you like it is for me at times)and leave off the dairy products if you're eating out or sub them for safe alternatives at home.

If you hop over to the recipe forum, there are also some Mexican-type recipes over there.

In my opionion, mexican food is one of the easiest to eat on the IBS diet because it is so easy to substitute. Obviously chicken is safe, sub grnd turkey for grnd beef, you can get low-fat and safe tortillas, salsa is typically safe, sub sour cream & cheese or do away with it altogether. It is also very easy to make safe rice dishes and we all know that beans are a good source of fiber as long as they aren't refried or something. Good luck!

I have no problems with most Mexican food -- burritos especially. I usually go vegaterian b/c the quality of meats in restaurants isn't that great. In VA there's a quick take-out place called "Moe's" where I always get a burrito with black beans, rice, salsa, lettuce, and a bit of quac. As long as you avoid sour cream and cheese, it's all pretty good.

At home it is pretty easy to enjoy Mexican food - I had taco salad last night for dinner:

Ground turkey breast seasoned with a recipe from this site

Low fat corn tortillas chips (crunched up into small pieces)

White Rice

Small amound of black bean dip (can't handle much of this)

Small amount of baby green lettuces

Small amount of diced tomatoes (with seeds removed)

Small amount of guacamole

1 tsp. of soy sour cream

Salsa

DELICIOUS!!!

It is more difficult at restaurants because you can't control the amount of oil used and whether the tortillas are made with milk. I do well at Baja Fresh - I order a burrito with chicken breast and rice only guacomole on the side. Also their chicken breast tacos are fine with just the chicken breast because they steam the corn tortilla not fry them... I get them without the onions.

Hope this helps,
Leigh

P.S. Here is the recipe for the faux Lawry's seasoning mix - I often double or triple it just to have on hand.

1 tablespoon flour
1 teaspoon chili powder
1 teaspoon paprika
3/4 teaspoon minced onion (I JUST USE ONION POWDER)
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon sugar
1/8 teaspoon ground oregano (I OMIT THIS )

Combine all of the ingredients in a small bowl. Use 2 tablespoons plus 1/3 cup water per 1/2 pound ground meat.
