I think most syrups have high fructose corn syrup in them which can trigger attacks.

Pancake syrups typically contain high fructose corn syrup, which is a trigger for a lot of people. Interestingly, I can tolerate HFCS, but pancake syrup KILLS me - can't touch the stuff.
Real maple syrup, however, I'm fine with. You might be too.

I am highly fructose intolerant but I can eat maple syrup.
Maple syrup contains no additional fructose. The USDA nutrient laboratory has a database of 9000 plus foods. It gives the sugar, glucose and fructose composition for many foods.

The database claims a 100 grams of maple syrup contains 59.9 grams of sugar of which 56.3 grams is sucrose, 2.37 grams of glucose and 0.88 grams of fructose.
Sucrose is a sugar containing precisely equal amounts of glucose and fructose. The latest research shows that general speaking if fructose and glucose are in equal amounts in the form of sucrose then fructose sensitive individuals can tolerate a reasonable amount of it.
