Can anyone recommend a good alternative to butter that is safe and dairy free?

There are a lot of soy margarines on the market, usually available from health food stores - do a board search for soy margarine, no time limit, and you'll see what brands people tend to like. Keep in mind that these typically have the same fat content as butter, so you do have to use them very sparingly.
As far as what you can buy from the grocery store, the only margarine I've found that's dairy-free is Smart Balance LIGHT. It has to be the LIGHT one - the regular one contains dairy. This also has the advantage of being lower in fat... you can't really bake or cook with it, but it's great used lightly on a baked potato, etc.

In addition to the Smart Balance, Becel makes a dairy free product, it's the one with the red lid. And I think Fleishmann's makes one too.
