Real recipes for real people

Okay. No offense Heather, and realize when I ask this that I haven't read through the recipes, but just reading the titles of the recipes in the book scare me. They all sound very gourmet. I don't have time for cooking gourmet-type meals, nor the patience. I need real recipes for real people who don't cook a lot. I also need the recipes to be easy and as quick as possible. Now perhaps once I read the full recipe, and not just the title, I'll see that they aren't too "gourmet" with ingredients I'm not too familiar with and aren't really too difficult or too time-consuming. But, at first look I'm afraid these recipes won't be very helpful for me.
Any thoughts?

there are all levels of recipes and easy to make ones are a mainstay of many of us.. to be honest some of Heathers recipes sound worse then they are and others I don't ahve time for either...

There is lots of good stuff in there.
I have used some of Heather's recipes, but to be honest, I'm usually to lazy to track down some of more obscure ingredients. However, her cornbread recipe is delicions, though I use an 8x8 pan instead of a loaf pan.

I'm right there with ya! If it wasn't for my DH who loves to cook, I'd starve. On nights he works late... I just find whatever is in the fridge. I'd love it if there was a pared down recipe book. I tried one of the recipes the other day but man, I was exhausted after I was done cooking. One of the reasons I just hate cooking!

Smoothies and stir-frys! That's what I've been making lately, smoothies with banana, few berries and soy milk. Stir fry with chicken or tofu, carrots, peppers, broccoli, just put anything you can tolerate and you like in it. I also try to make a ton of pasta or rice few times a week so that I don't have to prepare some all the time. It's easier to store cooked that potatoes (I find they dry out).
