I don't know if you can eat mushrooms but I usally make my BF a steak and me a portabella mushroom cap. (it cuts like a steak to me) Then I will make us baked potatoes and let him top his how he wants. Then I make a steamed veggie and some french bread on the side. He loves it and you can still stay on Heather's diet.

How involved do you want it to be, simple or slightly more gourmet? Although you can do both.

by the way Tonnie, good suggestions.

I actually will carmelize onions and portebellas, add some garlic and a little butter and chives to top a good New York steak.

Check the recipe board for my recipe for Penne with Vodka Marinara. My hubbie is a total meat and potato guy (won't touch mushrooms or soy or anything like that) and when I make him the penne with vodka, he swoons.

Pretty easy to mimic a standard "meat and potatoes" meal with a chicken breast, baked potato and some safe veggies, no? I'm a vegetarian... so maybe my conception of "meat" is too indiscriminate here, lol
