Bread Maker Question

Hi all,

Just dug out my bread maker after a long hiatus. I made a loaf of white bread the other day, and substituted soy milk for the water+powdered milk. Did I read an earlier post from someone who said they just used water and left out the powdered milk altogether? What do you all normally use instead of the shortening? I used low-fat margarine, and it tasted fine, but I was worried that the fat in the soy milk plus the fat in the margarine would be too much...

I was the one that omits the milk powder. I use regular margarine - sometimes the low fat ones don't cook well for me. If you are looking for a lower fat content, try a french bread recipe. There is even less margarine in it, and no milk at all. It comes out light and fluffy inside with a crispy crust outside. If you need a recipe, let me know and I'll post it for you.

Lily - I read in one of my bread books that the dry milk absorbs any excess liquid and keeps the dough from being too "soupy". Don't see why we can't use potato flakes instead of dry milk. One of my books calls for dry milk and the other calls for dry potato flakes. I'm going to try it.

Lily - I think on an earlier post, someone (maybe Heather?)_mentioned something about the availability of a powdered soy milk. You might want to do a search and see what pops up!

Hi Lily - I have two great books on bread by machine. They're called Electric Bread and they have the most wonderful recipes in them. If you do a search you might be able to find where I mentioned a bunch of them that I thought would be okay for IBSers. If you can't find it, let me know and I'll type some of the names of the breads.
