Is Fennel ok to eat as a vegetable?

I have cut out most of the insoluble fiber vegetables but I was wondering if fennel is considered soluble or insoluble? I really like it steamed with fish. I haven't had it since I started the IBS diet, so I'm a bit afraid to add it back in.

You just have to eat it safely...but do NOT cut it out.

Does eating it "safely" mean cooking for a long time until it is very soft?

Thats one way. You can also peel, chop, and puree IF fruits and vegetables, or blend IF fruit into a smoothie. Also, IF should always be eating with, or after, Soluble Fiber. Soluble Fiber and Insoluble Fiber compliment eachother ... they can't do their job without the other.

I love anise/fennel as a vegetable & eat it when I feel stable. Just follow the guidelines. How do you handle cooked celery? I usually remove the tough outer layers of the anise/fennel bulb & chop it into babyfine matchstick slices & make sure it's very well cooked. I agree--it is lovely with fish, poultry, CARROTS & BEETS & PORTABELLA MUSHROOMS. It would be lovely in a risotto or rice/mushroom dish as well! Use your discretion & base the decision on how you feel & the trend of your IBS. I know that if I'm not feeling very stable, fennel or celery would be very painful. However, if I'm stable it is lovely. Also, I'll often blend it into sauces/dressings/soups. I love it's sublime flavour.

Thanks for the welcome! Next time I make it, I'll just cook it longer than usual. I'll do that with other fibrous vegetables from now on. I'm glad someone else likes the taste of fennel
