Yup! With me the little cheats all build up if I cheat too regularly and then one-day, BOOM, my body's had enough and tells me so.
Tr sticking to the diet and taking a SFS no matter how you are doing. That should balance you out more.

We are in the same boat: I have been eating cheese, drinking milk and cookies, eating chocolate, Taco Bell, and even has a little Dr. Pepper. But now that it is my time of the month, my IBS has come back. I do go through bouts of where I can do almost anything I want and it usually last 4 weeks or so and then it rears its ugly head. I am thankful that we sometimes get a break and are able to be normal for a little while. It goes and comes. I proably have a good spout every 2-3 months.Good luck I hope yours last for a long time.

I'd much rather mostly follow the diet and keep cheat foods as occasional treats and stay stable ALL the time, than to have periods of eating junk food and dairy regularly and then periods of feeling really ill.
Just my 2 cents, but it might be worth considering!
