While scanning the internet I ran across two products that claim to eliminate IBS symtoms. One is Digestrol and the other is Digestrin. Has anyone tried or even heard of these products?

They are just digestive enzymes. They are NOT a cure for IBS, will NOT eliminate your symptoms on their own and I do NOT recommend you try them.
If you want to try digestive enzymes, go to your HFS or pharmacy and get a reputable brand. Don't spend unneccesary amounts of money on these products...you will just be lining the pockets of charlatans who are taking sick people for a ride.

Have you researched these particular products or is it just a general rule-of-thumb that most of the products sold as IBS remedies are enzymes?

Linz is right, of course; she's probably one of the most knowledgeable people on this board. There have been a few discussions in the past about these products. You might want to try doing a search for Digestrin. Here are two I found: Digestrin, Digestrin and the BBB .
It does seem that a lot of these IBS remedies, like Digestrin, aren't anything special. It's frustrating and wrong for these companies to claim that their products cure or eliminate IBS symptoms. There is no cure for IBS - there's not even a known cause for the disorder yet. So, the best we can do is minimize our symptoms.
The company that markets and manufactures Digestrin has received a warning letter from the FDA for making false claims on their website. Plus, if you look under "Clinical Facts" on the Digestrin webpage it's nothing but testimonials! Anecdotal evidence can't replace clinical trials or studies.
