store bought bread

Hi Guys, I'm trying to incorporate Bread back into my diet to see if I'm having trouble with Gluten. what store bought bread is safe for the IBS diet? today has been hell for me, I ate 3 Graham crackers and chicken stew that had cooked onions..I don't know which one caused the pain. this is all trial and error

Any white, Italian, sourdough bread that doesn't contain dairy or high fructose corn syrup is safe for even the beginning stages of the IBS diet. Unfortunately, because brands vary from area to area, and even bakeries aren't standardized, you have to read the labels and check the ingredients yourself.
And yeah, it's totally all trial and error.

If you do a Search on "sandwich bread" (don't use the quotes) with no time limit, you'll find a number of posts on it.
I suggest you try the Break The Cycle diet, then start adding in additional foods gradually. It can be a good way to figure out what you can and can't tolerate.

I eat oat bran bread and also buy fresh made Sour dough bread.

Farmer's Market old traditional white bread. Fine for me. Only has a few ingredients, and no dairy.
