Hi All,
I haven't had a "need" to post for awhile, and that has been a great thing. However, I just had a pretty serious attack after eating the Thai-Fried Rice recipe from EFI. this isn't the first time either (I tried two different brands, both Vietnamese and Thai). I like what the fish sauce adds, but it's not so good that I am willing to live through an attack to eat it
I did do a search on this topic because I know it kind of has before, but I didn't find the answers I was looking for. Hopefully someone can help: 1. If fish sauce is a trigger, what has been a good substitute? 2. How have you adapted Heather's recipes to live without the stuff?
Many thanks, Chigal -- Go White Sox!

Hi Chigal, It depends what's in the fish sauce, if there's a ton of dairy and fat in, yeah sure. White Sox?! and you're from St.Louis? or does the Chi mean originally from Chicago? My sister lives about two miles from Wrigley, we usually go see and root for the Cubs -Bob

Re: fish sauce--it shouldn't be a trigger as it contains: anchovy extract, salt, and sugar.
If there's something I either don't like in a recipe or looks like it might disagree with me, I just eliminate it completely. Sometimes I substitute and sometimes I don't bother. I really depends on the recipe.
Kate.

No fat, no dairy -- jsut anchovy extract, salt, and sugar. Weird, huh. Then again, just about anything is capable of causing an attack at times.
I grew up in the Chicago area but have been in Cardinal Country for 20 years! Heck, down here they don't even think the American League exists! Wrigley is lots of fun too. My heart has been too badly broken by the Cubs to watch them in any serious way I just hope this heat wave breaks soon. I'm sick of sweating all the time (and it's not doing my belly any good!).

it could be another ingredient. For me the garlic and onions would NOT set well.
I use fish sauce all the time with rice noodles/shrimp/peas...it's a mild combo that always sets well.
Try just fish sauce with something else, like plain rice to see if it really is the trigger ingredient or not. We're all a little different with what our tummy can handle and what it can't.
