I decided to try to make the "cereal yogurt bars" that I found somewhere on this message board. Easy steps and basic ingredients, however, mine didn't quite turn out like "bars"...they are mushy! They do taste good but the consistency is sort of like...oatmeal! Gosh...has anyone else tried this recipe? What did I do wrong??
Cereal Yogurt Bars
2 cups cereal ( rice krispies, corn flakes or your choice of safe cereal) 3/4 cups plus 2 tablespoons diveded flour 1/4 cup brown sugar 1/2 tsp cinnamon 1/2 cup unsalted margarine ( or your substitute) 1 8oz container of soy yogurt any flavor (or use your IBs safe yogurt) 1 egg ( 1/4 cup egg beater)slightly beaten
Heat oven 350. spray 8 inch square baking pan with no stick cooking spray. mix cereal, 3/4 cup flour,sugar and cinnamon in a small bowl. Cut margarine until mixture resembles coarse crumbs. Press 1/2 of the mixture in bottom of prepared pan. Mix yogurt, egg and remaining 2 tablespoons of flour in another small bowl. Spread over cereal mixture in pan, sprinkle with remaining cereal mixture. Bake for 30 minutes or until golden brown. Cool in pan on wire rack. Cut into bars. makes 16 bars.

Did you use 1/2 C margarine or did you use something like applesauce? I've found that doing an equal sub for margarine w/ fruit purees only works out OK in stuff like cakes and muffins. If it's something more "textured" (i.e. bars, cookies, fudge), you have to be a little more creative.
Even if you did use the margarine, note that 1/2 C would make it really high in fat and probably not too safe.
Try posting this over on the recipes board, you might get more responses that way.
P.S. I just made rice crispy treats this weekend. I thought of you.

I did use 1/2 C of margarine...I had a few bits or spoonfuls of the cereal bar and I felt okay...it's just that they didn't quite turn out to be "bars"...
P.S. isn't margarine okay if it is reduced fat and non hydrogenated???

Reduced-fat margarine just has more air & water and usually doesn't work as a sub anyway. Depending on the brand, it makes things either mushier (because of higher water content) or harder (because it's had air whipped into it and doesn't end up the same volume as "real" margarine). I remember my husband's first and only attempt at baking cookies -- he used whipped margarine from a tub and they were like bricks!
The general consensus is that stuff should be 25% of calories from fat -- or less. I'm too lazy to work out the fat from the original recipe, but my guess is that it's a lot higher than that. If you only eat a couple bites, especially if you've already had a safe meal, you'll probably be OK. Some people are also pretty tolerant to fat and can go higher than 25%.
