There is a vegan egg/egg-white replacer product. The egg replacer is made by ener-g. Go to www.ener-g.com for more details. It's gf and kosher! You can get it at most health food stores. I've never used it as I rarely bake anything.
If I did, though, I would use this.

Ruchie, are you really craving some scrambled eggs? If your bod wants some egg whites, then give it a shot. Garnish, perhaps with a little of your beloved avocado? Toss in some rice/potato/herbs/spinach/zucchini/mushrooms? I don't know--you'll have to check the site. I just wonder if you're getting enough amino acids. You sound so stressed out.

I have this at home and the box says only for baking. It cannot be used to make scrambled eggs or be whipped.
Sorry, sweetie. I agree with Kate...just eat the egg white if that's what your body is telling you it wants. Why don't you want to eat egg whites? My friend is Jewish and so is my SIL and they eat egg whites all the time. I think Dalia does too.
