your recipe sounds good. I eat zuchini every day, almost, with the skin (cooked), and it has never given me a problem, but I always eat it with rice or pasta. Also, when I make zuchini bread, the peel is grated up with the whole zuchini and cooked with the bread, and it is okay that way too. There are good nutrients in that green peel, so eating it is a good way to get some vitamins that you may be missing.

Thanks this ol' man is still new at this stuff. Will probably post this weekend as I'm trying to get some hay in for my horses (wish that hay solved my problem). Thanks, again!
