Porridge Oats - can anyone .......

I have read in several places that porridge oats should be soaked overnight before being cooked in the morning. Could anyone please tell me why? Also, what do we soak them in - water? milk? (non dairy of course) fruit juice???

Soaking oats in water is just fine! You can even put a pinch of salt in it to bring out the flavor of the oats more.

The reason for soaking the oats is it makes the nutrients in it more bio-available, as well as speeding up the cooking times.
