Subsitute

Hell I am trying to make rice pudding in my crock pot. I am substituting rice milk for evaporated. I'm not sure what to substitute for butter. I just started this diet a few days ago...I'm in pretty bad shape.
I made the lemon rice pudding already, I didn't really care for it. Any suggestions?

To substitute for butter, use a soy margarine instead. Many folks (including me!) have tried Soy Garden and loved it.

Personally, I would just leave the butter out... I've never had rice pudding with butter in it, I can't even imagine it.
But if you must have the butter, Ruchie's suggestion is perfect. Soy Garden is good stuff. You do, however, still have to go really carefully with it, because it IS pure fat - I'm not sure how much the recipe calls for, but definitely don't use more than a couple tablespoons.
