enzyme in coffee?

Heather mentions an 'enzyme' in coffee that makes it tough on IBS folks. Can you help me...what is the enzyme? Or, is it the acid? I have read many positive reviews of low acid coffee and Toddycaffe...a cold brew coffemaker that removes most of the acid. Am wondering if those things would be helpful or if I am barking up the wrong tree! Thanks so much!

I don't know the name of the enzyme, but it's definitely an enzyme and not just the acidity... low-acid and decaf coffees are just as bad for you as the regular stuff. Sorry. (I know what a disappointment it is... giving up coffee was a struggle for me!)
