2 Questions:
1) What can I do about dairy? Can I not eat it at all? Or can I eat a small amount of it safely? For example, if I'm served homemade pizza with cheese that's part-skim and I take off the surface grease, can I eat 1 piece? Or can I balance its effects out with soluble fiber?
2) If I don't have a BM for a day or two (of any kind), what's the best thing to eat to help me along?

The pizza thing is up to you. Most IBSers have trouble with dairy regardless, and is best to avoid. But if you're in a situation where you're offered pizza, you may find you'll be OK. It depends on ther person. I can tolerate dairy in small amounts, but more than that, no. Some can't tolerate any. Some can tolerate a lot.
As for what can help you along after a couple of days, I would suggest increasing your insoluble fibre intake. Keep up with your soluble fibre, or if you're on a supplement, even better.
