Is fructose IBS safe as a sweetener?

Nope. We should try and avoid it outside of fruit definitely! I think other people will know a bit more about why it isn't safe.. all I know is that does me no good as an added substance! Plain old sucrose is safe though - that's what regular sugar is. Although, I wouldn't recommend consuming too much of any sugar, they tend to make some people gassy.

What about other sweeteners, like turbinado sugar, sucanat, xylitol, maple sugar?

Fructose isn't all bad - it's just that too much can be a trigger. So kinda treat it like IF - after SF only and not too much at once. Fructose is what makes all fruit (including applesauce sweet). Now the real culprit is HIGH fructose corn syrup (HFCS) which is basically it concentrated. This is in a lot of US products, so check labels.
Other natural sweeteners like maple sugar are fine. They're just made of glucose and fructose molecules. Artificial sweeteners aren't.

Xylitol is similar to sorbitol, mannitol and malitol. They will give you "D".
I would stay away from them and High Fructose Corn Syrup.

Thanks Linz for clearing that up. People get a little crazy about sugar types. Remember honey is fructose and everyone thinks it is so great and then talks about scary fructose. Aren't sugar substitutes worse than any type of sugar? So fructose and plain corn syrup are ok but should not be consumed in large amounts. Or at least I think so.
