I *think* Jello is generally safe... I think the reason some people avoid it is that they're sensitive to the dyes and artificial flavorings, but if you think you can handle that ok, you should be fine with it.

I usually buy Jello brand, but I think any brand is okay. As long as you get regular jello not light because then they will conatin artificial sweeteners (splenda, etc). I only buy cherry so I can't say mcuh for flavours but I think they would all be about the same.

Well thank you for the information. I have been looking for something to use as my after dinner snack, besides Oat Bran and Applesauce. The problem with those is, they both are high in carbs, and I am concerned that I am having too many, causing me to be hungray, especially after dinner.
Jello presents a light, sweet, low carb snack I will be sure to use, would it be considered solubale fiber, because I would like have nuts at my last snack.

Wow, nuts as your last snack??, you can eat alot of things that would send my stomach into cramping and crazy mode. What kind of nuts are you eating? I had 2 cashews the other night cause I couldn't stand looking at them (swear they were taunting me) and my stomach started rumbling. I make Jello more as a dessert because it is nice and light and sweet like you said. Just to remind you I don't have problems with it but there are others on here who might. We are all so different with our food tolerances. So I hope you find it okay for you because it is always nice to add something new to the menu!

I know this isn't what you want to hear but at first, at least while you're getting stabilized, it's going to be pretty difficult to have a totally carb-free and totally safe snack.
Why?
Carb-free = fiber-free = no SF-base.
Some people (maybe you) might be fine with jello on an empty stomach, but some people definitely wouldn't be. Especially the low-carb kind if it has any artificial sweeteners.
Don't fear carbs!!!!!!
