I first made my own applesauce by cooking 2 apples & mashing them up (leaving a few small chunks). But you could use unsweetened bottled applesauce. Everyone in my family thought they were great. Wonderful for breakfast.

I just looked for it again on the site & couldn't find it. Don't remember how I found it the first time. But I wrote it down, so I've got it in my kitchen.

...actually reheat really quickly and easily, so I make a double batch and keep them in the fridge. To reheat, just toss them in a *dry* frying pan for a minute or so on each side. It's really that quick, which makes them perfect for workday breakfasts too.

...is my favorite so far. Rice pudding is good breakfast food too. If you don't want to go through the trouble of making a whole batch of rice pudding, a much quicker alternative is to microwave some leftover rice with soy milk in it for moisture, then sweeten, add a dash of vanilla & a sprinkle of cinnamon.

And I'm with Amie... leftovers always work for breakfast if I'm feeling like breakfast food just isn't going to cut it.

Hey, while I've got you here, can I ask you something? I remember we were both struggling with our weights when we last spoke..um...posted.

Have you gained any weight yet? I have gained about 4 lbs without really trying. My appetite has really come back.
