I agree with you, this site is great - you'll find the most caring & compassionate people here!
Wish I could help you with the chicken gravy situation, but I haven't tried that yet. If you haven't tried the recipe board yet, why not try there. There are some pretty delicious recipes listed there.

I found a chicken gravy recipe while perusing the boards. Here Goes: 1/4 cup each -chopped onions, mushrooms, celery, carrots 1 sm. clove garlic, minced 1 ounce skinless, boneless chicken breast 1/3 cup flour 2 cans of 14 oz. each Low Sodium Chicken Broth, defatted Pinches of THYME, ROSEMARY, SAGE PEPPER & SALT (optional) Coat al large no stick saucepan with spray. Add onions, mushrooms, celery, carrots and garlic. Cook over med heat, stirring constantly for 5 minutes. Add chicken. Cook, stirring for 1-2 min., or until chicken is no longer pink. Remove chicken & veggies & set aside. Add flour to the pan, cook over med. heat, stirring for 5 min. or until a light tan color. Remove from heat and gradually whisk in the broth until smooth. Add spices. Cook over med. heat whisking constantly for 2-3 min., or until thick.Add the reserved chicken & veggies. Reduce heat to low, simmer for 5 minutes or until veggies are hot. Season with s&p. Puree the finished gravy in a blender or food processor.
