Well, I was going to be good and bake a little brownie recipe that only serves 2 people. But then I decided that I wanted leftovers (hee hee). And I couldn't find a recipe to fit my 9-inch-square pan, and I didn't feel like doing math out the wazoo, so I just borrowed my friend's 9-by-13-inch pan. So oh boy, there are certainly leftovers . But oh so good...

Antidepressant Brownies

3/4 cup (175 mL) unsweetened cocoa powder
1/2 teaspoon (2 mL) baking soda
1/3 cup (75 mL) EACH oil and applesauce
1/2 cup (125 mL) boiling water
2 cups (500 mL) sugar
4 egg whites
1 1/3 cups (325 mL) flour
1 teaspoon (5 mL) vanilla

Preheat the oven to 350 degrees F (180 degrees C).

Grease a 9-by-13-inch (22-by-33-cm) baking pan.

In a large bowl, stir together the cocoa and baking soda. Blend in the oil, and mix until smooth. Pour in the boiling water, sitrring until the mixture thickens. Now stir in the applesauce, the sugar, and the egg whites. Mix until smooth.

Add the flour and the vanilla. Blend completely--there should be no lumps. Now pour into the greased baking pan. Spread the batter evenly to avoid crispy edges.

Bake for 35 to 40 minutes (mine were done in 25, but I used a glass dish), until just set in the middle.

Let cool and cut into squares.

Makes about 20 brownies (I cut them into 24).

Ok.... all the talk about this recipe..... it is weekend time.... I'm just gonna have to make these!! I just printed it off. Funny thing is... I ALWAYS have these ingredients NOW...so this will take me no time at all

FINALLY made these this weekend!! WOW.... it was fast, they are YUMMY YUMMY YUMMY.....

After hubby & I each tasted one.... he said, "what is for dinner and do I get another brownie with it?!!??"

Oh, hubby wanted brownies again last night..... and when he gets a craving.... there is no end to hearing about it until he gets it!! LOL

So, while watching the season premiere of 24...(we love that show)... I whipped up these brownies again. We each had one about 10 mins after they came out of the oven.... that is about as long as I could keep him away from the pan....hehehe

Tess.... he told me to tell you that you rock!!

Linz you were asking about freezing them.... I'll have to try that tonight when I get home....otherwise they will all be gone so fast! I'll let ya know!

Tess, these brownies are TO DIE FOR!!! I can't believe it; I thought brownies had to have bags of chocolate chips in them and lots and lots of butter for them to be tasty. You proved me wrong! These brownies are incredible. Who would think they have applesauce in them?!? Even Don is diving into them (and he claims to not care for sweets!). THANK YOU!!!!

Made these again.... they are cooling now...can't wait to taste them again....!! UUmmm....... mouth is watering.... or maybe that is from the Zesty Mexican Chicken I made tonight and we just ate?

Has anyone made these in a 9x9? I want to make these, but I want them a little thicker. Do you think I could make it in a 9x9? Do I need to adjust the recipe or the baking time?
