Fish with soy sauce, sauteed spinach and rice - Good Friday?

This sounds really nice - I haven't tried it yet but thought I might use it on Good Friday. let me know if you try it.

serves 2

2 white fish fillets (I thought salmon would be nice too)
1 t sesame oil
2T soy sauce
1/2 cup fat free veg stock
1 small bunch spinach leaves chopped
1T miso paste (any colour)combined with another 1/2c of veg stock

Sear each side of fish in sesame oil for 2 to 3 minutes until just done adding a little stock if necessary during cooking.

Add soy sauce and rest of stock and heat through until fish has been glazed by the sauce.

Place spinach in a hot pan with miso/stock and cook approx 3 minutes until spinach has wilted.

To serve, divide spinach amongst 2 plates, top with fish and add a side of cooked white rice.

Sounds yummy!

This DOES sound yummy! I've never had sesame oil...what kind of flavor is it? Let us know if you decide to make it...and what you think. Thanks Kerrie!!!!!!!

Sesame oil is wonderful. It actually comes in light and dark varieties. I always use the dark, which is made from roasted sesame seeds. You only need a smidgen of the oil in recipes because it's very strongly flavored - nutty and rich, and a little bit smoky (especially if you stir fry with a dash of it). It's also delicious in Asian dipping sauces (mix a little soy sauce, vinegar, brown sugar, and a few drops of the sesame oil, dilute with water to taste).
