PASTA WITH CREAMY CLAM SAUCE

1 (14-1/2 ounce) can fat-free, low sodium chicken broth

2 (2.8-ounce) packages chicken flavor baked Romen noodle soup-DO NO make as directed on package.

1 (6-1/2-ounce) can minced clams, not drained

1 clove minced garlic

2 tablespoons butter substitute

1/4 cup cornstarch

1/2 cup soy or rice milk

*Mince clove of garlic and set aside.

*In large saucepan bring the chicken broth to a boil. It will take about 3 minutes on high.

*Break the noodles into small pieced and drop them into the broth.

*Add the whole can of clams not drained, garlic & butter. Simmer 3 minutes, stirring occasionally.

*While the noodles are cooking, in a small bowl dissolve the cornstarch in the milk by briskly stirring with a fork. Once the noodles are done, reduce heat to low.

*Add ONE seasoning packet from the noodles and stir in the milk/cornstarch mixture into the broth and noodles. Keep stirring until thick and creamy, about 2 to 3 minutes.

*Serve hot.
Yield: 4-1/2 (1-cup) servings
Preparation time: 6 minutes or less
Cooking time: 9 minutes or less
Total time: 15 minutes or less

*Note: Recipe called for both packets of seasoning, but it was way too salty that way and I had to throw it out. You can use the other packet to add to water when making rice for a nice flavor.

most Ramen noodles have msg don't they?

believe it or not they have healthy (not fried noodle) versions of Top Ramen. Asian markets will have them too. The health food varieties shouldn't have MSG. And, usually the MSG in even the regular kinds of ramen is all in the sauce packet. If you just use the noodles you should be just fine.
