In my never ending search for new ideas in the kitchen, I came up with this.
6 Large Flour Tortillas 1 cup of Texturized Vegetable Protein 1 tbsp. chicken stock 1 can of beans 1 cup of soycheese (your choice) 1 cup of mild salsa
Preheat oven to 175degrees celsius.
First cook beans on the stovetop, draining as much liquid as you can. Puree with a blender.
Reconstitute the TVP. Directions should be on the package. It's as easy as making oatmeal or instant rice. In a pot boil a cup of water with the chicken stock (or other flavour you might like) and add the TVP, stir until the texture is not watery, but done well.
Spray one baking sheet with spray or use a non-stick baking sheet.
Place two tortillas side by side on the baking tray. Divide the pot of pureed beans onto each tortilla, spread to cover the entire tortilla. Add another flour tortilla to each (stack them).
On the second layer divide the TVP evenly.
Add the last tortilla to each stack, respectively. Then spoon desired amount of salsa on to each. Grate cheese. Sprinkle cheese on top of tortillas.
Bake in the oven until cheese melts (the temp. really doesn't matter).
Cut each pie (for lack of a better term) in half. One half per person. Very filling.
