Take 2 russet potatoes, peel em' and boil em' until soft. Drain and put in a bowl. Add 1.5 cups of mayo and 1 Tbsp. of dried parsley flakes (one tbsp. of onion as prefered). Mix well and enjoy!
Hope the ingredients sound reasonable to you and that you can try this. I personally can't eat this recipe anymore--but I make it for my hubby all the time--he loves it! You might want to try using soy milk as a substitute for the mayo--I have no idea how that would taste.....or if you use non-dairy creamer (I hear coffee rich is totaly dairy free), they make a fat free verison, that might work. I guess you'd have tp play around with the recipe and see what works for you. I hope you're doing well!!!!
