I dug a good cookbook I have called Spread yourself thin and wanted to share some recipes with you all, I think they should all be ok. here is one
stuffed mushroom caps 1 lb medium sized mushrooms 2 tsp olive oil 1 cup finely chopped onion 2 cloves garlic, minced 1 tbsp chopped fresh basil 1 tbsp chopped fresh rosemary 1/2 cup bread crumbs 1/2 cup chopped fresh parsley salt and pepper to taste
wipe the mushrooms with a damp tea towel to remove any dirt. Remove stems and chop them finely. Preheat oven to 450f. Heat the oil in the skillet add the onion and garlic. Cook over low heat until lightly browned 5 minutes. Add the mushrooms and stems and cook for an additional 3 minutes. Add the basil,rosemary,parsly,crumbs and s&p. Saute another 3 minutes, then set aside to cool a little. Place the cleaned mushrooms caps on a non stick baking sheet and fill each with equal amounts of the stuffing. Bake for 15-20 minutes or till stuffing is nicely browned. Serve immediatly. Makes 20 calories: 32 fat:1.2 g
