Trish - did you try health food stores and grocery stores or specialty stores? If not, you could probably substitute applesauce (unsweetened) or pureed prunes for the darker breads and cakes (like chocolate or banana). The baby food (Gerbers) works good and I've been thinking of just buying cooked prunes and pureeing them in my blender. Or maybe the dried prunes, rehydrating them and then put in blender. The quantity for substitution is the same as qty for original fat called for in the recipe. Hope this helps.
