Linz, here's another idea for you!

Linz, I know you're trying to reduce your sugar intake and I just stumbled across this recipe (and adapted it, of course) so I thought I'd share:


1 c. Quick Quaker oats
1 c. mashed, very ripe banana
1/2 c. soy or rice milk
2 egg whites or 1/4 cup egg substitute, beaten
3 Tbsp. canola oil
3/4 c. whole wheat flour (or white or some of each, depending on what you can tolerate)
1 Tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon

Preheat oven to 375 º F. Line muffin tins with foil cups (or spray tins with non-stick spray). Stir oats, banana, milk, egg and oil together. In separate bowl mix remaining dry ingredients together. Combine both mixtures just until mixed. Pour into lined muffin tins. Bake for 15 to 20 minutes or until a cake tester comes out clean.
