Angel - here are a couple of recipes--one for pumpernickel bread and plain bagels. Let me know how they turn out. I've made the pumpernickel before and I love it. I've never made the bagels. Good Luck.

Pumpernickel for Bread Machine

Large Loaf
1-1/4 c warm water
1-1/2 c white bread flour (Better For Bread)
½ c wheat bread flour
1 c rye flour
2 tbsp sugar
1-1/2 tsp salt
2 tbsp butter (or dilute the Butter Buds in hot water)
¼ c cornmeal
2-1/2 tbsp cocoa powder
3-1/2 tbsp molasses
2-1/2 tsp fast rise yeast
O R
3-1/4 tsp active dry yeast

The recipe calls for ½ tsp instant coffee which probably can be omitted and 1-1/2 tsp dry milk, which also can be omitted. And, caraway seeds, which I always leave out—don't like 'em.

Bake only on regular cycle. You need the double knead. This is a heavy, dark bread, and the loaf will be short and stout and dense. If your machine doesn't have a second knead, after the first one, just start the machine over.

Plain Bagels for Bread Machine

1-1/8 c warm water
3 c white bread flour
3-1/3 tbsp brown sugar
1 tsp salt
2-1/2 tsp fast rise yeast

3-1/4 tsp active dry

Remove dough from machine after the first knead. Place dough on floured surface. Divide into 8 parts. Form balls, gently press center of ball and slowly stretch into bagel shape. While bagels rise, bring 3 qts water and 1 tbsp sugar to a rapid boil in a large sauce pan. Drop test dough in boiling water. It should pop to the top right away. When this happens, it's time to boil the bagels. Boil on each side for 1.5 min. Remove and cool on rack 1 min, brush with egg wash or spray with Pam. Bake at 400 on a baking sheet sprinkled w/cornmeal until golden. About 15 min.

To make bagel sticks, cut bagel before rising and lay out in a straight line. Let sticks rise and bake as described above.

I have pumpkin spice, cranberry orange, garlic, cinnamon raisin and onion bagel recipes if anyone wants them.
