Grate 3 medium peeled potatoes, 8 ounces pumpkin, 1 large peeled carrot, 1 small peeled zucchini into a large bowl. Add 1 small chopped onion, 5 egg whites, 1/3c flour, 1 t baking powder, 1t salt and 2t mixed herbs and mix well. Lightly spray non stick pan and spoon mixture into non-stick egg rings.
