LOL I think I had the tempurature at 375. 6 medium potatoes 3 Tbsp. butter- (I used about 1 Tbsp of soy butter) 1 small onion finely chopped 3 Tbsp flour 1 tsp salt 1/4 tsp pepper 2 1/2 cups of milk (soy milk) Grease 2 qt. casseroles. Heat the butter in a saucepan and cook onions, stirring occasionally. Stir in flour, salt, and pepper. Cook stirring constantly till smooth and bubbling. Remove from heat. Stir in milk and heat until boiling, stirring constantly. Boil for 1 min. Rotate 1/2 potatoes, 1/2 sauce. Cover and bake 30 min and then uncovered 60-70min until potatoes are tender. The recipe says you can stir in 3/4 cup of cheese in sauce before pouring over potatoes. I did add the cheese but then cooked it longer to melt the soy cheese. Maybe I should have added it with the milk. I was also wondering if I should have cut down on the flour. Since it had the onions, I wasn't sure if it was suppose to be equal parts flour and oil.
