I made this last night and ate like a pig but stopped only because I knew if I ate any more I'd be sick *grin*
Simple Chicken and Noodles (Serves 4)
6 oz. No Yolks egg noodles 2 chicken breasts cooked and chopped (or 2 cups cooked, chopped left over chicken breasts) 2 cups water 2 tsp Herbox chicken instant bouillon & seasoning 1 tsp poultry seasoning 1 cup frozen peas and carrots 1 small onion (chopped) 2 stalks celery (chopped) 1 1/2 T. corn starch 1 tsp canola oil
Cook noodles according to directions on package. Meanwhile heat canola oil to large sauce pan. Add onion and celery and cook for 3 minutes or until soft, stiring constantly. Mix cornstarch, bouillion and cold water well until smooth and add to sauce pan along with peas and carrots, chicken and seasoning. Cook and stir until bubbly and thickened. Continue cooking for 5 min on low heat stiring constantly. When noodles are done drain and add chicken mixture.Stir and serve.
