My brother was a allergic to so many foods as a child, everything we ate was rice flour,milk etc. Here's a recipe we enjoyed as kids.
1/2 cup white rice flour 3 tbsp sugar 1/2 tsp baking soda dash of salt 1 tsp canola oil 1/2 cup juice (any kind will work, but my mom used Juice from a lite can of pears)
Mix dry ingredients, stir in oil add liquid slowly, Batter will be thin. Cook on medium-low heat. Turn when pancake looks dry on top. You cann use your non stick spray to cook with. Top with your favorite syrup or spreadable jam.
