I think some people tolerate the acidity of tomatoes better than others, so it's probably something you'll have to experiment with. Personally, I'm fine with tomato sauce, soup, etc. as long as I have it with soluble fiber (e.g. sauce on pasta, a tiny bowl of soup with a sandwich, and the rice in the case of this recipe). And Bev is right, sugar cuts down on the acidity, too!
