Yesterday I made the recipe for Chewy Oatmeal Spice Bars. They came out very good, both my husband and I really enjoyed them. I have a few questions, first can I sub the margarine for something more IBS friendly, if so what? Secondly how long will these bars keep? Do they need to be refrigerated? Third, can someone help me calculate the calories & fat for this recipe?

I'm so glad you made these and posted how good they are. I've been thinking about trying a granola bar for a long time and these look great.

I poked around and found the original recipe on Recipezaar:

Original Recipe

and there's nutrition info in there. According to that, the recipe makes 32 bars each of which has 122 calories, 17 calories from fat (14% CFF). The only change Kree made was to sub soy milk for skim milk but since 2 Tablespoons of Silk has only about 5 fat calories that substitution won't make a significant difference in the amount of fat.

In general, I find that low-fat baked goods do well on the counter for a day or two at most and then need to be refrigerated or frozen. (I wonder if these will freeze - if I try I'll post and let you know.) One of the comments on Recipezaar says, ""After the bars were cooled I cut them into 24 servings, individually wrapped in plastic wrap and stored in the fridge. After 7 days they were still delicious!"

When I make them I'll probably use Earth Balance Buttery Sticks for the margarine. You could also try Smart Balance Light or even canola oil. I *think* you'll be okay texture-wise because 4 Tablespoons of fat just isn't a lot compared to the volume of other ingredients.

The comments on Recipezaar are really interesting. They talk about using other fruits or even coconut or nuts (which will up the fat). Some of the cooks prefer the bars with less sugar or with honey or cooked at a different temp. A couple of people explain how to make a half-recipe.

HTH.
