Turkey Maid-Rites (I'd give these 5 trophies if I could)

Being from the South originally and New Jersey now, I'd never heard of Maid-Rites. When I first heard the name, I thought they were some kind of cleaning service. When I realized they were food, I asked jen1013 what they were and she was kind enough to email me the following recipe. These are fabulous! They have become my go-to dinner when I want something fast, delicious, and comforting.

I make these in a non-stick skillet and use ground turkey breast (which I break up with a non-stick pancake turner or wooden spoon) and Earth Balance Shortening sticks (Crisco would work fine, too). Because I didn't have any white vinegar the first time I made these, I used cider vinegar instead and they tasted so good I've continued to use it. We eat ours with chopped onion, yellow mustard, and hamburger dills. Yum!


Turkey Maid-Rites

1 lb thawed ultra-low-fat ground turkey (i.e. Jenni-O 99% fat-free)
1 T vegan or vegetable shortening (NO SUBSTITUTES -- DO NOT OMIT)
1 t salt
1 med onion, diced
1 T prepared yellow mustard
1 T white vinegar
1 T sugar
water
salt and pepper

In a skillet, melt the shortening. Once it is melted, sprinkle the salt over the bottom of the pan. Add ground turkey and onion. Use a potato masher to crumble the meat as you cook it (basically, cook it like you'd cook meat for chili or tacos -- I prefer a traditional metal potato masher for this).

When the meat is cooked, drain the fat and return to the pan. Add the mustard, vinegar, sugar, and mix well. Add enough hot water to just barely cover the meat.

Simmer until all of the water has cooked away. This should take about 20 minutes, so if it doesn't seem to be going fast enough turn up the heat. The meat should end up moist but not wet.

Taste and add salt and pepper as needed. (I didn't need.)

Serve on good-quality hamburger buns with dill pickle slices, fresh raw chopped onion, and yellow mustard. Non-purists may also use ketchup, but anything else is just wrong. (We ate them plain on buns with nothing added.)

Because this is so basic, I would strongly advise not making any substitutes or omitting anything, at least not until you've made them once.
