Boiled Shrimp with lots of flavor

Boiled Shrimp

This is for 1 to 1-1/2 pounds of shrimp. I used frozen peeled, cleaned, deveined with tails still on. You can use whatever shrimp you like but I think you get more flavor into the shrimp if it's peeled or at least split-shell.

Fill a large pot about half full of water. Add the following to the water and bring to a boil:

1 lemon; squeeze the juice into the pot then throw the peels in
1 bay leaf
1 teaspoon salt
1-2 Tablespoons Old Bay Seasoning
About a teaspoon of dried thyme (or use fresh if you have it)
1/4 onion, peeled and cut into 4 large chunks
2-3 teaspoons minced garlic

When the water comes to a boil, add the shrimp carefully to keep from splashing yourself and cook until done. Most recipes say 2-3 minutes, I prefer at least 7 for thawed shrimp, at least 10 for frozen.

When shrimp are cooked, pour into a colander to strain. Put at least a tray's worth of ice cubes on top to cool the shrimp down. When the shrimp are cool enough to handle (about 15 minutes), pick them out of the colander, discarding onion bits and lemons. Chill and serve as is or with more lemon for squeezing and/or cocktail sauce.

These should also be delicious hot so they could be served right after straining with no cool down.

I discarded the liquid but if you have any use for shrimp or seafood broth, you might be able to use it for that.
