Chicken Marengo recipe

I have one of those fast/healthy cookbooks and made this recipe this past weekend... its delicious!! Takes a little bit of time though, but I've frozen some so I can eat it next week too.

Chicken Marengo:
1 Tb olive oil
4 chicken breasts (it says bones in, but i ignored that)
1 Tablespoon flour
1/2 tsp dried basil
1/4 tsp garlic powder
1/8 tsp pepper
1/2 cup white wine or chicken broth (whatever you can handle, i did chicken broth)
2 tablespoons tomato paste
2 14.5 or 16oz cans of whole tomatoes, drained and chopped up
1/2 cup chopped green bell pepper
1 medium onion (I used much less)
1/4 cup halved or sliced ripe olives (I skipped this too, don't like olives!)

Cook the chicken breasts with the oil until browned.
In a seperate bowl, combine spices, flour, wine/broth, and tomatoe paste. Blend well and add the cans of tomatoes.
Move chicken to the side of the skillet, pour the tomato mix in, and place the chicken back on top of the tomato mix. Bring to a boil. Reduce heat to a medium low, cover and cook for 10 mins, stirring occasionally.
Turn chicken, stir in bell pepper and onion. Cover and cook another 10 mins (or until chicken is fork tender + juices are clear). Stir in olives.

I ate it over pasta, for a soluble fiber base. Yum yum yum!!
