Here's a summer pie recipe

I must post this recipe now as it calls for rhubarb and so it fits this time of year.

Rhubarb pudding pie with streusal topping

preheat oven to 350
1 package organic graham crackers (not the box just one package- about 10 crackers) made into fine crumbs
2T melted Smart Balance
2T sugar
Mix above in a bowl and add about 2/3 to a pie plate (or medium baking pan) or whatever fits nicely in the pan. Press evenly into pan. reserve the remainder for topping
Bake for 5 minutes and remove.

Mix togther:
1/2c egg beaters
1 1/3c sugar
1/4c flour
4c rhubarb, peeled and chopped (about 8 stalks)
1T. smart balance (optional)
Pour into pie plate.
Mix together and top pie with:
remaining graham cracker mixture
2 packets plain instant oatmeal
1/3c flour
2T brown sugar
1T smart balance, melted
1/4t soda
pinch of salt

Bake at 350 for about 40 minutes or until golden brown on edges and not wobbly in middle. Remove from oven and cool on rack 5 minutes. Run a sharp knife around edge of pan to help crust unstick from pan. Best served cold but hot is okay too.
This recipe can be made in one bowl. Melt margarine in cup measure that you will measure eggs in. It is so easy!
