Greek-Inspired Pasta

Had this last night and it was amazing!!! Can't wait for the leftovers at lunch!

Greek-Inspired Pasta

8oz. penne pasta - cooked according to manf. directions
3 plum tomatoes, chopped
2 garlic cloves, minced
20 slices turkey pepperoni (or more or less to taste)
1 can (13oz) artichoke hearts packed in water, drained and chopped
1 can (2.25oz) sliced black olives, drained
1/4 tsp. onion powder
1/4 cup feta cheese, or substitute
Olive oil (a couple tablespoons)
Black pepper to taste

Place pepperoni on a paper towel lined plate and top with another paper towel. Microwave on high power for 45 seconds to release some of the oils. Chop pepperoni coursely into quarters.

Combine all ingredients except the pasta and feta into a large skillet. Saute on medium heat until warm. Add the cooked pasta and the feta cheese. Drizzle with olive oil and toss to combine.

That's it!! So easy and so delicious!
