*Please note that not everyone can tolerate corn, so make adjustments as necessary.
1 3/4 cups water 1 14 ounce can fat free chicken broth 1/2 pound chicken breast cut up into small pieces (I used the precooked kind to save time)
1-2 teaspoons of chili powder 1 11- ounce can of corn (omit if can't tolerate) 1 cup of Tostitos salsa or any other kind of salsa 3 cups of Baked Tostitoes 2 ounces of Monteray Jack Cheese( I used soy for myself and regular for hubby)
In a large saucepan combine water, chicken broth, and chili powder. Bring to a boil reduce heat. Cover and simmer for 8minutes. Add corn. Simmer uncovered for 5 minutes more. Stir in salsa: heat through
Ladle soup into bowls. Top with tortilla chips and cheese or even sour cream.
This is sooo good and quick. I made it with Heather's cornbread! Talk about heavenly!!
