Chicken in mustard sauce

Ingredients:
4 chicken breasts or breast portions, skinned seasoned plain flour
25 g (1oz) butter or margarine, diced or 2x15ml spoons (2 tablespoons) oil (optional- see note*)
1 onion, finely chopped
400 ml (14fl oz) Alpro soya dairy free alternative to milk
approximately 15 ml spoon (1 tablespoon) Dijon mustard
15 ml spoon (1 tablespoon) chopped fresh tarragon
salt and freshly ground black pepper

Preparation:
Toss the chicken portions in seasoned flour. Heat the butter or margarine or oil, if used in a flameproof casserole, add the onion and cook, stirring occasionally, until softened. Remove using a slotted spoon. Add the chicken to the casserole and cook until lightly and evenly browned. Return the onions to the casserole, pour the Alpro soya dairy free alternative to milk over and bring just to simmering point. Stir in the mustard and tarragon, add the seasoning, cover the casserole then cook at just below simmering point for about 15 minutes for chicken breasts, 20 minutes for breast portions, depending on size. Taste and adjust the seasoning and level of mustard, if necessary.

*Note: to prepare the chicken without additional fat, simmer the onion in a little water in a small saucepan until soft. Cook the chicken in a non-stick pan over a moderately low heat until lightly browned. Add the onion and continue as above.
