This is a yummy way to use up leftover chicken, especially during peach season!
300-400 g chicken or turkey, grilled (I think this turned out to be around 2 cups chopped, but don't quote me on that. I whipped out the scale.) 2 peaches, chopped (she recommends canned; I used fresh!) 1 egg, hard boiled and yolk discarded 2 tablespoons light or FF mayonnaise
Chop the first 3 ingedients. Mix in a bowl with the mayonnaise. I usually put it in the fridge for a few hours, so the taste of the ingredients can blend, but I guess you could eat it right away. Enjoy!
