potato encrusted chicken breast

very yummy- got compliments, but replace the potatoes with your own safe potatoes if you can't have a lot of garlic....

5 chicken breasts
4 xtra large potatoes (or 6 regular size) peeled and cut in pieces
6-8 cloves of fresh garlic
1 cup chicken broth
2 pats of margarine

preheat oven to 450
boil potatoes and garlic until soft
drain
mash together with broth and margarine

coat breasts in a thick layer of potatoes and then bake as normal (half an hour or so)

yummy and simple... and easy way to have leftovers in one container!
