A simple switch from cream to soy creamer made this one safe. It was from Gourmet but I adapted it long ago.
Chicken Louisa
4 (pounded 1/3 in. thick) chicken breasts 1t. olive oil and Pam 3 shallots, finely chopped 1/2c. dry white wine 1/2c. Silk creamer 4 or 5 plum tomatoes (preferably mixed colors), seeded, chopped and drained on paper towel other good summer tomato can be used 2T. finely chopped tarragon or other herb, such as basil I use basil and rosemary 1t. chicken bouillon I use veggie stock concentrate salt and pepper
Season chicken with salt and pepper. Heat oil in skillet, sauté chicken until just cooked through and place on warm platter or in oven. (do 2 breasts at a time) Add shallot to pan, cook one minute. Deglaze pan with wine, reduce by half. Add tomatoes simmer 4 minutes or until thickened. Add creamer and simmer. Return chicken to pan, season to taste. Serve over angel hair pasta, with baguettes and salad, if desired. This is best made in the summer with good tomatoes.
